My Butternut Squash Soup turned out so beautifully that I thought I would share some pictures with you. It was velvety smooth and intensely flavourful. The hot curry powder, fresh nutmeg and colourful tumeric from my recent spice delivery really helped to give this soup a kick!

Although the squash is not cheap - I paid at least $4.50 for mine - the soup makes quite a large batch. This batch made 5-6 portions.

And the soup is easily turned into a meal with the addition of a couple of small side dishes. I like eating it with some homemade crispy pita chips and homemade hummus.

I made a variation on my aunt’s super-tasty parsley butter soup.
I originally started out making that, but then I added too many carrots and had no parsley, so it ended up being a really thick puree, but tasty nonetheless! And it is SO GOOD FOR YOU, too!
You should try making a curried carrot soup too, they can be fantastic!

I happen to be one of the recipients of this soup and it is amazing..the texture is beautifully smooth (velvety is a perfect adjective, and the taste is divine. I asked her to make another batch for Thanksgiving weekend and she agreed..yay!

Ginger, curried carrot soup sounds delicious - that’ll be a great one to try.

I came across a great Butter Chicken recipe on Canadian Living’s website. When I made it last night, it fed three adults for dinner, me & the bf dinner tonight AND was able to freeze enough for at least 4 more dinners. That soup looks yum!!! We tried making chorizo pasta last week, similar to the one we get from our favourite takeaway and it was just as tasty. Cheaper too per serving.
